Combine 1½ cups of the marshmallows and 3 tablespoons of the butter in the bowl and heat, stirring, until melted and completely smooth. Combine the chocolate chips, cream, and remaining 2 tablespoons butter in the bowl and heat, stirring, until melted and smooth. Keep warm over very low heat until ready to use.\u003cbr\u003e \u003cbr\u003e7.        Arrange the remaining 1 cup mini marshmallows in a single layer on a rimmed baking sheet. Using a kitchen torch, toast the marshmallows lightly. Let cool completely. \u003cbr\u003e \u003cbr\u003e8.        To assemble the cupcakes, use a 1-inch ring mold to punch out the center of each cupcake (but not all the way through); reserve the punched-out piece. Fill the cavities with the marshmallow-cereal mixture. Place the reserved cupcake piece on top, pressing it back into place. Spread chocolate ganache frosting across the top of each cupcake and top with toasted marshmallows.
